Wheat Berrry Apple Salad
Description
Healthy Wheatberry and Apple Recipe. Wheatberries, Walnuts, Apples, raisins and more goodies.
Ingredients
- 2 cups uncooked wheat berries
- 1 cup chopped walnuts
- 2 medium apples, cored and chopped
- 1/2 cup celery, finely chopped
- 1 cup seedless raisins
- 3/4 chopped parsley
- 1/2 cup apple juice
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon cinnamon
- 1/2 cup extra virgin olive oil
- 2 Tablespoons lemon juice
Methods/steps
- Put wheat berries in a bowl, cover with at least 2 inches of water. Soak for 8 hours or overnight. Drain well
- Put 7 cups on water into a medium pot, bring to boil. Add wheat berries, reduce heat and simmer for approx. 50 minutes, or until cooked. (Cooked wheat berries retain a firm texture when cooked.) Drain and cool
- Transfer wheat berries to a large bowl. Add remaining ingredients. Mix thoroughly.
