Strawberry Bread
Description
Try a slice with sliced strawberrys and a dollop of whipped cream on top. Yum.
Ingredients
- 12 ripe strawberries (to make 2/3 cup crushed)
- 2 eggs
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1 cup all-purpose flour
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Methods/steps
- Heat oven to 350F
- Oil an 8 1/2 x 4 1/2 inch loaf pan and set aside.
- Hull and slice strawberries, then crush them to measure 2/3 cup. Set aside.
- Put eggs, sugar, oil and vanilla in bowl; beat with electric mixer until light and fluffy. Add flour, cinnamon, baking soda and salt. Beat well.
- Add crushed strawberries.
- Pour batter into prepared pan and bake for 55-60 minutes or until it tests done.
- Cool in pan on a rack, remove bread from pan.
