Spinach with Pine Nuts
Description
Easy Spinach side dish. Add some presoaked raisins and chopped apples for a Catalonian style recipe.
Ingredients
- 1 teaspoon olive oil
- 3/4 cup chopped onion
- 2 cloves garlic
- 2 bags (1 pound each) prewashed spinach
- 1/4 cup toasted pine nuts
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground pepper
Methods/steps
- Heat oil in dutch oven over medium heat.
- Add onions and garlic, cook until tender, stirring occasionally. Add one-fourth of spinach to the pan, stirring occasionally. As spinach wilts add the remaining spinach one-fourth at a time.
- Stir in remaining ingredients.
