Sharlotka - Russian Apple Cake

This Russian Recipe was emailed to me by a work/travel student of mine from Volgograd Russia. Yana submitted her mother's, Margarita Kotlyarova, recipe for cake Sharlotka. Thank You Yana.
Ingredients
- 3 eggs
- 1 cup white sugar
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- apples (enough to line the bottom of the pan)
Methods/steps
- Preheat oven to 350 degrees F (175 degrees C).
- Grease and flour round cake pan.
- Slice apples.
- In a large bowl, cream together eggs and sugar till light and
- fluffy.
- Add flour and baking soda.
- Fold into batter, being careful not to over-mix.
- Put sliced apples on the bottom of the pan and pour the batter.
- Bake in preheated oven for 30 minutes, or until a knife inserted into the center comes out clean.
