Sausage and Apple Quiche
Description
The apple adds a great flavor to this quiche. Wonderful for Sunday brunch.
Ingredients
- 1 9 inch pastry shell (you can use frozen pie shell)
- 1/2 pound bulk spicy pork sausage
- 1/2 cup chopped onion
- 3/4 cup shredded, peeled tart apple
- 1 Tablespoon lemon juice
- 1 Tablespoon sugar
- 1/8 teaspoon crushed red pepper flakes
- 1 cup shredded Cheddar cheese
- 3 eggs
- 1 1/2 cups half & half
- 1/4 teaspoon salt
- ground black pepper
Methods/steps
- Preheat over to 425F
- Bake pastry shell until lightly browned, let cool
- Reduce heat to 375 F
- Crumble sausage in a large skillet, add onion and cook over medium heat until sausage is brown and onion is tender. Drain off pan drippings.
- Add apple, lemon juice, sugar and red pepper flakes to skillet. Cook stirring constantly until the apple is just tender and all liquid has evaporated. Let cool.
- Spoon mixture into the pastry shell. Top with cheese. Wisk eggs, half & half, salt and a dash of pepper in medium bowl. Pour over the misture. Do mot stir.
- Bake 35-45 minutes or until filling is puffed.
- Let stand for 10 minutes.
Additional Tips
I've tried this with Italian sausage and Jimmy Dean Sage sausage. Both turned out great.
