Rock Lobster Grilled with Mango Vinaigrette

Wonderful rock lobster recipe submitted by scubamoo. This recipe was a find on a dive trip to Belize.
Ingredients
Mango-Line Vinaigrette
- 1/4 cup cilantro
- 1 green onion, sliced thin
- 1 Tablespoon fresh ginger, finely chopped
- 2 cups mango, chopped
- 1/4 cup lime juice
- 1 Tablespoon white vinegar or rice vinegar
Lime Marinade
- 1/4 cup lime juice
- 3 cloves garlic
- salt and pepper
Lobster
- 4 rock lobsters
Methods/steps
- Mix all salsa ingredients. Refrigerate until ready to use.
- Make marinade by combining ingredients.
- Split rock lobsters in half lengthwise. Pour marinade over lobster reserving some for basting.
- Heat grill to medium 300-350F. Place grill meat side down. Grill for about 3-4 minutes or until meat is scored. Turn, baste and grill for 5-8 minutes more.
- Serve with Mango mixture.
