Ricotta Pie

Get your cheese on! When I was a teen my family used to belong to the Italian Social Club outside of Philly. At a picinic I tasted this pie and absolutely loved it. The nice women that made it mailed my mother the recipe.
Ingredients
- 2 cups flour
- 1/2 teaspoon salt
- 1 cup lard
- 2 egg yolks
- 2 Tablespoons cold water
- 3 1/2 cups ricotta cheese
- 1/4 cup flour
- 1 Tablespoon grated orange peel
- 1 Tablespoons grated lemon peel
- 1 Tablespoon vanilla
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 4 eggs
- 1 cup sugar
Methods/steps
- Grease a 9 inch pie pan. Mix the flour (2 cups), salt and lard. Add egg yolks and water. Blend until well mixed. Shape into a ball and flatten on a floured surface. Roll out pastry to a circle one inch larger than the pan. Place in pan; pinch edge of pastry to stnad up 1/4 inch above the pan.
- Mix ricotta, 1/4 cup flour, the orange and lemon peels, vanilla salt and cinnamon. Beat eggs until light and foamy. Stir eggs into ricotta mixture. Add sugar gradually, a little at a time. Pour into pie pan. Bake in a preheated 350 degree oven until mixture is firm, about 1 hour.
- Cool before serving.
