Pumpkin Pancakes
Description
Spiced Pumpkin Pancakes. Serve with warm maple syrup.
Ingredients
- 2 cups all-purpose flour
- 2 Tablespoons sugar
- 2 teaspoons baking soda
- 1 teaspoon ground cinnomon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 3/4 cups milk (lowfat is fine)
- 1 cup can pumpkin
- 2 large eggs
- 2 Tablespoons salad oil
Methods/steps
- In a bowl mix all the dry ingredients (first 7 ingredients)
- In another bowl mix the pumpkin, eggs and oil
- Add the flour mixture and stir until just moistened.
- On a lightly oiled or nonstick griddle over medium heat, pour batter in 1/4 cup portions. Cook until bubbles form on the tops and the bottoms are browned.. Turn and cook about a minute more.
- Serve with butter and syrup
