Pork Loin with Tomato Caper Sauce

Easy Pork Lion Recipe with a Caper Sauce.
Ingredients
- 1-2 pound boneless pork loin
- 3 cloves garlic, chopped
- salt and pepper
Caper Sauce
- 1/4 cup minced onion
- 2 Tablespoons wine vinegar
- 2/3 cup chicken broth
- 1/3 cup tomato sauce
- salt and fresh ground pepper
- 1/4 teaspoon cayenne pepper
- 3 Tablespoons capers, drained
- 2 Tablespoons butter
Methods/steps
- Rub the outside of the roast with garlic, leave garlic on the roast. Salt and pepper. Roast uncovered at 350F until meat thermometer reaches 160F (cook about 20 minutes per pound)
- Slice and serve with Caper Sauce
Caper Sauce
- Place onion and vinegar in a small saucepan. Bring to a boil and simmer until most of liquid evaporates. Add chicken broth and tomato sauce;return to a boil. Reduce heat, add seasonings and simmer for about 5 minutes. Stir in capers and butter.
Additional Tips
Gravy salvaged from the roasting pork (after fat has drained off completely) can be used as part of the 2/3 cup chicken broth.
