Obama Surprise
Description
I've been staring at a green acorn squash in the refrigerator for awhile and made up my mind to use it somehow. I whipped up this healthy dessert using ingredients that were on hand just in time to watch the first inaugural ball on TV.
Ingredients
- 1 green acorn squash about 5" in diameter
- 1/2 orange juice
- 2 ripe pears, peeled and chopped in 1/4" cubes
- 1 small box of raisins
- 1 snack size "ready to eat" vanilla pudding
- 2 tablespoons brown sugar
- 1/4 teaspoon pumpkin pie spice
- 3-4 tablespoons maple syrup
- 1/4 cup pecan pieces
- 1/4 to 1/3 cup apple or flavored brandy
- 4 ramekin dishes
Methods/steps
- Slice the squash in two and scoop out the seeds and pulp. Cut the bottoms of the 2 sides enough for them to sit up straight, if necessary. Pour approx. 1/4 cup of orange juice into each squash.Bake at 350 for approx 45 minutes. Remove from oven and let cool. Once cool to touch cut the squash from the rind into 1/4" cubes.
- Working with all ramekins side by side scoop the squash equally into each cup. Sprinkle them with the raisins. Then layer equally the vanilla pudding into each cup. Then add the pears.
- Place the brown sugar, pumpkin spice and maple syrup in a microwave safe cup and cook for about 45 seconds . Pour this evenly over the mixture. Best of all top it off with a bit of apple brandy. You may also use any flavored brandy you have.
- Top with pecan pieces and bake in the oven at 350 for approx. 30 minutes.
Additional Tips
The only thing I may have added to this dish if I had it on hand was a bit of granola or a cereal such as "Honey Bunches of Oats" for a crunchy topping.
