Moroccan Shish Kebab
Grilled lamb with bacon wrapped prunes. This is my wife's recipe. She puts it together and I grill it.
Ingredients
- 2 pounds lamb (boned with fat trimmed off)
- 3 Tablespoons lemon juice
- 3 cloves garlic minced
- 2 Tablespoons ground cumin
- 3 dozen pitted prunes
- 12 slices bacon, cut crosswise and into thirds
- 3 dozen dry bay leaves
- lemon wedges
- salt and pepper to taste
Methods/steps
- Cut lamb into 1 inch pieces.
- In a bowl mix lamb, lemon juice, garlic and cumin.
- Wrap prunes in bacon.
- Thread meat, wrapped prunes and bay leaves alternately on skewers. You will need 8 skewers. Leave a little space between prunes and meat so the bacon cooks evenly.
- Place skewers on grill. Cook turning often until bacon is brown and lamb is browned but still pink in the center. Cut a piece to test.
- Squeeze lemon juice over servings. Add salt and pepper to taste.
Additional Tips
I use metal skewers. If you are using the wood kind you need to soak them first.
