Mom's Cranberry Bread
Heritage Recipe: My mom is 73 taught me this recipe when I was about 8 for 4H I am now 52, she was taught this recipe by her mom, so this is pretty old, but one of the best, moist cranberry breads I have ever had or have ever made, hope you agree, in the fall I can\'t keep up W/ people wanting me to make this bread for them or for Thanksgiving, ENJOY With Love
Ingredients
- 2 cups flour
- 1 teaspoon Baking Soda
- 3/4 cup sugar
- 2 cups cranberries cut in half
- 1/2 cup walnuts coarsely chopped
- 1 egg beaten
- 1/3 cup good orange juice
- 1/3 cup good vegetable oil
- 3 Tablespoons vinegar into a 2/3 cup
- milk to top off 2/3 cup
Methods/steps
- Pre-heat oven to 350
- Grease and flour a good size bread pan.
- Put dry ingredients (flour, sugar, baking soda) into large bowl, mix all ingredients well
- Add the beaten egg and oil to mix, add orange juice. Mix well making sure it is all incorporated. Put 3 Tablespoons of vinegar into a 2/3 cup measure. Add milk to make 2/3 cups. Add the vinegar and milk mixture to the bowl and mix it all in. Then add the chopped walnuts and cranberries, fold in well.
- Pour batter put into your bread pan, bake 50-60 min
Additional Tips
The bread is wonderful with cream cheese a nice cup of tea. Enjoy
