Matzoh Kugel

Ingredients
- 1 Box Matzoh
- 1 (6 oz) can frozen orange juice, diluted
- 1 Cup vegetable or canola oil
- 2/3 Cup sugar
- 6 Large eggs (use 2 whole eggs + 4 whites or 1 Cup egg substitute to lower fat)
- 1 Cup raisins
- 1 Cup chopped nuts
Methods/steps
- Preheat oven to 350° F. Soak matzoh in water until soft and drain well through large sieve or colander. Place drained matzoh in very large mixing bowl along with remaining ingredients and mix well. Pour into well oiled 3 Qt. glass Pyrex or 2 metal 9x13 baking pans. Bake glass at 325° F. for 50 minutes or metal at 350° F. for 1 hour. Check after 45 minutes, middle should be set; top should be lightly browned; and toothpick should come out clean. Serve warm. This will keep covered in refrigerator for up to 1 week. You can also cut into squares and freeze for later use.
