Marinated Flank Steak with Corn and Tomato Relish

Ingredients
Marinade:
- 1/3 cup dry red wine
- 1/4 cup chopped Vidalia or other sweet onion
- 2 teaspoons low-sodium soy sauce
- 2 garlic cloves, minced
- 1/2 teaspoon black pepper
Corn and Tomato Relish
- 3 corn cobs, husked (canned or frozen can be substituted if fresh not available)
- 2 large tomatoes, chopped
- 4 green onions, sliced
- 1/4 cup fresh cilantro chopped
- 2 Tablespoons lime juice
- 1 1/2 teaspoons Cajun seasoning.
Methods/steps
- In a medium bowl, mix the marinade ingredients. Place meat in a shallow glass dish.
- Score the surface of the steak with 1/4 inch deep knife cuts, about an inch apart, across the grain of the meat.
- Pour marinade over the steak, turning meat to coat thoroughly. Cover, and refrigerate for 6 hours.
- Make Relish - Place corn in a microwave dish, cover loosely with damp paper towels. Microwave on high for five minutes, turning over halfway through cooking. Let cool for 5 minutes. Cut corn from cob. Place corn in a bowl. Add tomatoes, green onions, cilantro, lime juice and cajun seasoning. Mix together. Set aside
- Preheat grill for medium-high heat.
- Oil the grill grate. Place steaks on the grill, and discard the marinade. Grill meat for 5 minutes per side, or to desired doneness.
- Top with Corn and Tomato Relish.
