Lamb Shish-Kebab
Ingredients
- 1/4 cup salad oil
- 1/4 cup red wine vinegar
- 1/4 cup lemon juice
- 2 clove garlic, minced
- 3 teaspoons salt
- 1/4 teaspoon pepper
- 1 teaspoon dried oregano
- 4 pounds boned leg of lamb cut in 1 1/2-inch cubes
- vegetables if desired (red peppers, green pepper, onion, tomatoes)
Methods/steps
- Combine all ingredients; add meat and let marinate in refrigerator 3 to 6 hours, turning meat over several times.
- Thread meat through oiled skewers and place on the grill over charcoal, turning to brown evenly. Cook until medium done.
- If you would like to cook with vegetables, alternate meat and vegetables on skewers.

You can easily cut this recipe in half to serve 4
