Hummus Middle Eastern Style
Description
Why buy hummus when it is so easy to make. This is the basic recipe but be creative. Add jarred roasted red peppers that have been rinsed and dried or omit the cumin and add paprika (I like the smoked paprika). Another version is add a little more lemon juice, omit the cumin and add jarred artichokes. The possibilites are endless.
Ingredients
- 2 cans of chickpeas rinsed and drained
- 1/3 cup lemon juice
- 1/3 cup tahini (stir well to blend in the oil)
- 3 cloves of garlic
- 1/2 teaspoon ground cumin
- 1/8 teaspoon cayenne pepper (or more to taste)
- 1 teaspoon sea salt
- olive oil and parsley to garnish
Methods/steps
- Combine lemon juice, tahini, garlic, cumin, cayenne, and sea salt in a blender or food processor. Blend for 5 seconds. Add chickpeas and blend on high. Add water until the desired consistency is reached. (usually about 1/4 - 1/3 cup water)
- Refrigerate covered a few hours before serving.
- Garnish with olive oil and parsley.
