Hoppin John
Description
Gullah dish often associated with New Years. No New Years celebration in Charleston is complete without a bowl of Hoppin John
Ingredients
- 1 cup black eye peas
- 4 cups water
- 2 teaspoons salt
- 1 cup white rice
- 4 slices of bacon
- 1 medium onion chopped
Methods/steps
- Let the peas soak overnight in the salted water. Do not drain.
- Boil the softened peas in the salt watered water until tender.
- Add the peas and 1 cup of pea liquid to the rice. Saute the onion and bacon. Add the onion, bacon and bacon grease to the rice. Cook until rice is done.
