3 gallons

3 gallons cider vinegar
2 dozen peppercorns
1 dozen sliced shallots
3/4 cup tarragon
8 sprigs rosemary
8 springs tyme
1/4 cup oregano
4 branches winter savory
1 spring chervil
1/3 cup parsley

Methods/steps

Heat cider slowly to just below the boiling point.
Add remaining ingredients.
After two weeks, strain the vinegar through a cheesecloth.
Place in sterile bottles and cork tightly.
