Herb Vinegar
Description
Bottle for Christmas gifts.
Ingredients
- 3 gallons cider vinegar
- 2 dozen peppercorns
- 1 dozen sliced shallots
- 3/4 cup tarragon
- 8 sprigs rosemary
- 8 springs tyme
- 1/4 cup oregano
- 4 branches winter savory
- 1 spring chervil
- 1/3 cup parsley
Methods/steps
- Heat cider slowly to just below the boiling point.
- Add remaining ingredients.
- After two weeks, strain the vinegar through a cheesecloth.
- Place in sterile bottles and cork tightly.
