Ham Butter Beans with Okra
Description
If I cook a ham this is what I usually do with the bone. My family loves it with cornbread.
Ingredients
- 1 ham bone (meaty) or 3 large smoked ham hocks
- 3 cups water
- 1 1/2 pounds fresh butter beans or 2 16 ounce cans drained
- 2 Tablespoons solid vegetable shortening.
- 1 Tablespoon sugar
- 1/2 pound okra, washed and thinly sliced
- 1 Tablespoon salt
- 2 teaspoons fresh ground pepper
Methods/steps
- Place the ham bone and water in a large saucepan. Cover and bring to a boil. Reduce heat to a simmer and cook for 45 minutes.
- Remove the bone from the pan and remove the meat. Finely shred the meat. Return the meat and the bone to the pot.
- Wash the butter beans and add to the pan. Heat to simmering. Stir in the rest of the ingredients and simmer until beans and okra are tender. (about 20-25 minutes)
- Discard bone.
