Greek Green Beans
A friend of ours owned a Greek Restaurant that we visited quite often. I loved her green beans. This is a copy-kat version as she does not give out recipes. Selfish girl! For lent we had this served over rice as dinner.
**lenten version - do not sautee onions and garlic - just add to the geens and tomatoes.
Ingredients
- 1/4 cup olive oil
- 1 medium onion
- 4 cloves garlic
- 2 pounds fresh green beans
- 2 Tablespoons fresh oregano
- 2 Tablespoons fresh mint
- 2 cans diced tomatoes (14.5 ounce cans)
- 1 can tomato sauce (8 ounces)
- 1 cup vegetable broth
- salt and pepper to taste
Methods/steps
- Sautee onion and garlic in olive oil until tender. Add remaining ingredients, Bring to boil, reduce heat and simmer until green beans are tender.
This recipes does well in a crockpot.
Additional Tips
This is a party size recipe. Cut recipe ingredients in half for a smaller amount.
