Greek Beef Stew
Good buffet dish served over rice.
Ingredients
- 1 cup minced parsley
- 1 6 oz can tomato paste
- 1/2 white wine
- 1/4 cup red wine vinegar
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon oregano
- 1/2 teaspoon sugar
- salt and pepper to taste
- 3 pounds boneless stew meat cut in 1-inch cubes
- 2 pounds small white onions peeled
- 1bay leaf
Topping of Feta cheese and/ or chopped walnuts is optional.
Methods/steps
- Preheat oven to 325
- In a large bowl combine parsley, tomato paste, wine, vinegar, cumin, cinnamon, oregano, sugar, salt and pepper.
- Add beef, onions and bay leaf. Combine and mix well.
- Transfer mixture to a dutch oven; heat over moderate heat, stirring until hot.
- Bake uncovered at 325 degrees until meat is tender. (approx. 1 3/4 hours)
- Transfer to serving dish and top with walnuts and cheese if desired.
